1 lb of chicken tenders
2 eggs, whisked
1 cup of unflavored protein powder
Salt and pepper, to taste
Avocado oil, for frying (use spray oil if air frying)
¼ cup of Choczero sugar-free honey
2 tbsp of sriracha
A pinch of chili flakes
Prepare the coating for the chicken tenders. In a large bowl or a shallow dish, place your unflavored protein powder or tapioca starch. Season this with salt and pepper. Feel free to add additional seasonings such as garlic powder and paprika for extra flavor.
In a separate shallow dish, beat the eggs.
Coat the chicken tenders: first dip them in the beaten eggs, then coat them evenly with the seasoned powder. Set aside.
For frying, heat avocado oil in a pan. Shallow fry the chicken tenders for 3-4 minutes on each side until they are crispy and fully cooked. If using an air fryer, cook at 400°F for 10-15 minutes, and remember to spray the tenders with avocado oil.
To make the spicy honey glaze, combine the sugar-free honey and sriracha in a small saucepan. Cook over low heat until well mixed. Add a pinch of chili flakes for extra heat.
Once the chicken tenders are cooked, coat them in the spicy honey glaze.
Serve hot, accompanied by your favorite dipping sauce.
