Keto BLT - E Breakfast Sandwich is a simple yet mouthwatering recipe that you can serve for breakfast or as an appetizer. We prepared it with a microwave for easier and quicker preparation, but you can also cook it in the oven. Soft and fluffy bread slices with the tasty filling will absolutely delight your taste buds and satisfy your hunger.

2 tablespoons butter
4 tablespoons coconut flour
2 tablespoons heavy cream
4 tablespoons water
6 bacon slices
1/2 leaf of lettuce or (A bit of baby spinach)
Salt, to taste
Black pepper, to taste
Melt the butter in a small saucepan.
Pour it into a small mixing bowl.
Add coconut flour, heavy cream, water, and two eggs
Whisk until homogeneous and lump-free.
Divide the batter between two mugs.
Transfer the mugs to a microwave and set the temperature on high and timer on 90 seconds.
Remove from the microwave and let it cool completely.
Remove from the mugs and cut in half (lengthwise).
In the meantime, arrange bacon slices in a non-stick skillet and place them over high heat.
Let them cook until the fat is translucent. Then, flip the slices and cook for a minute or two until white bubbles present.
Remove from the skillet and place them on kitchen paper to remove the excess fat.
Fry the egg in the same skillet as desired. Season with salt and black pepper.
Assemble the sandwiches by placing bacon slices, fried eggs, and greens with tomato slice between keto bread.
Serve and enjoy.
- To add savory flavor, add cheese slices.
