12 Mozzarella string cheese sticks, each halved into 24 sticks
2 tablespoons Coconut Flour
1 large Egg, beaten
1/2 cup Blanched Almond Flour
1/2 cup Crushed Pork Rinds
2 teaspoons Italian Seasoning
1/2 teaspoon Garlic Powder (optional)
Butter or Avocado Oil (for frying, optional)
Prepare Baking Sheet: Lay out parchment paper on a cookie sheet and set it aside.
Organize Coating Ingredients: In three separate small bowls, place coconut flour in one, beaten egg in the second, and a mixture of almond flour, crushed pork rinds, and Italian seasoning in the third.
Coat the Cheese: Coat each mozzarella piece first in coconut flour, then dip in the egg, allowing excess to drip off. Finally, roll it in the almond flour mixture until fully covered. Place each piece on the prepared cookie sheet, ensuring they don't touch each other.
Freeze: Freeze the coated cheese on the cookie sheet for at least an hour. This step is crucial to prevent cheese from leaking out during cooking.
1) Heat about 2 tablespoons of oil in a skillet over medium heat.
2) Fry the mozzarella sticks in a single layer, approximately 1-2 minutes per side, until they turn golden brown and the cheese inside feels soft upon gentle pressing.
1) Preheat your oven to 400°F (200°C).
2) Remove the cookie sheet from the freezer and place it in the oven, ideally on the second rack from the bottom.
3) Bake for 4-5 minutes until the bottom side turns golden. Flip and bake for another 3-4 minutes until the other side is also golden.
