Keto zucchini fritters are a tasty and light appetizer, easy to prepare, and loved by everyone for their delicate flavor. You can also serve them as a side dish with meat or fish dishes. As it is a versatile dish, you can follow our additional tips and enrich the recipe with other tasty and keto-friendly ingredients.
3 small zucchini, grated and squeezed
4 oz. Parmigiano Reggiano or Grana Padano cheese, grated
1 oz. Almond Flour (Blanched)
2 Large eggs
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons extra virgin olive oil
4 basil leaves, finely chopped
In a medium mixing bowl, lightly beat the eggs and season with salt and pepper.
Add in grated cheese and almond flour. Mix until you obtain a lump-free mixture.
Add drained zucchini and chopped basil. Gently combine with a wooden spoon.
Heat oil in a non-stick skillet over medium heat.
Pour approx. ¼ cup of the zucchini mixture in the skillet and push gently to give them a round shape.
Fry the fritters for 2 minutes per side.
Remove the fritter from the skillet and place them on kitchen paper to remove the excess oil.
Serve and enjoy!
