Chicken liver is an often overlooked superfood. When properly prepared chicken liver can have and exquisitely mild taste and silky yet tender texture. If you didn't like chicken liver as a kid you might like it in a uniquely earthy umami flavor. Liver is rich in Iron, B12, and vitamin A. Our low carb umami mushroom stroganoff sauce is wonderfully rich and pairs well with liver.
12 oz Fresh Mushrooms Sliced
1/2 Onion Chopped
3 Tbsp Butter Or Ghee
4 oz Cream Cheese or Vegan Alternative
1 Tbsp Umami Mushroom Powder
1.5 Tbsps. Beef Bone Broth Powder or (substitute low sodium beef bouillon)
1 tsp Garlic Powder
1 pound Chicken Livers
1 Tbsp Butter Or Ghee
1/2 Fresh Chopped Parsley
Chop onion and slice mushrooms
Add 1 Tbsp butter (or Ghee) to medium saucepan heat to medium
Sauté onions and mushroom until juices release
Add umami mushroom, beef bone broth, garlic powders to mixture
Melt in cream cheese or dairy free option and reduce heat to warm
In a separate pan add 2 Tbsp butter (Ghee), heat to medium
Fry livers a few minutes on each side until golden browned and cooked through
Lightly season livers with salt and pepper
Add stroganoff mushroom sauce to livers and garnish with fresh parsley.
