Ingredients
1/3 cup vital proteins collagen peptides powder
½ cup keto powdered sugar
1 cup peanut butter
2 eggs, lightly beaten
½ cup dark chocolate chips (sugar-free)
A few drops of vanilla extract
A pinch of salt
Directions
Preheat the oven to 325°F. Line a baking sheet with parchment paper.
In a mixing bowl, put all dry ingredients and mix with a fork.
In another mixing bowl, combine beaten eggs, peanut butter, and a few drops of vanilla extract.
Combine dry and liquid ingredients until homogeneous.
Stir in dark chocolate chips.
Scoop the dough with ice cream or a cookie scoop and place it onto the baking sheet.
Press each cookie with a flat meat mallet or a glass.
Bake for 20 minutes, until lightly golden.
Remove them from the oven and let cool completely.
Serve and enjoy.
Recipe Note
- Press each cookie dough to be ¼ inch thick.
- To prepare keto powdered sugar, blend erythritol in a high-speed blender until fluffy. You can also use monk fruit sweetener.
