Ingredients
-
1 lb steak (sirloin, ribeye, or tenderloin), cut into 1-inch cubes
-
1 bunch asparagus, trimmed and cut into 2-inch pieces
-
3 tbsp unsalted butter
-
2 cloves garlic, minced
-
2 tbsp olive oil
-
1 tsp smoked paprika
-
½ tsp onion powder
-
Salt and pepper to taste
-
1 tbsp chopped fresh parsley (optional, for garnish)
Directions
Prepare the steak:
In a bowl, toss the steak cubes with smoked paprika, onion powder, salt, and pepper. Set aside.
Cook the asparagus:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the asparagus and sauté for 3-4 minutes, or until crisp-tender. Remove from the skillet and set aside.
Sear the steak bites:
In the same skillet, heat the remaining olive oil. Add the steak cubes in a single layer and sear for 1-2 minutes per side until browned and cooked to your desired level of doneness. Remove and set aside.
Make the garlic butter sauce:
Lower the heat to medium and add butter to the skillet. Once melted, add the minced garlic and cook for 30 seconds, until fragrant.
Combine and serve:
Return the asparagus and steak bites to the skillet, tossing to coat everything in the garlic butter sauce. Cook for 1-2 minutes to heat through.
Garnish with chopped parsley, if desired, and serve immediately.
