Who doesn't like pizza? This is absolutely one of our favorite gluten-free guilt-free recipes. Our 3 ingredient homemade pizza sauce is to die for. Add any garden fresh vegetable toppings of your choice. This is keto friendly recipe is every bit as good as the real thing. Its crunchy and so delicious.
6 Oz "organic" Tomato Paste
2 Tbsp Sundried Tomato's in Olive Oil (finely chopped)
1-2 Tbsp Olive Oil (From Sundried Tomato's)
1 head Cauliflower, (riced) see directions
2 Whole Eggs
1/2 cup shredded Mozzarella Cheese
2 Tbsp freshly grated Parmesan Cheese
1 Tbsp Italian Seasoning (optional)
Salt and Pepper to taste
1 cup shredded Mozzarella Cheese
1/2 cup shredded Cheddar Cheese
1/4 cup Pepperoni Slices
1/4 Cup Chopped Bell Pepper (Red or Green)
1/4 cup fresh Basil Leaves (chiffonade) not chopped
3 Slices purple onion (halved)
4 Mushrooms sliced
Preheat oven to 425 degrees F
Line a regular or vented baking sheet with parchment paper or use a silicone baking mat without parchment.
In a food processor pulse cauliflower until you get a consistency of small grain rice. Makes about 3 cups depending on cauliflower size.
Transfer rice to microwave-safe bowl. Cover and microwave about 4-5 or until tender. Drain using cheese cloth or sieve.
In a mixing bowl combine Cauliflower Rice, Mozzarella, Parmesan, eggs, salt, pepper & Italian Seasoning to form a dough.
Spread and shape dough mixture onto parchment paper to form a thin 10-12 inch round crust.
Bake for 12-15 minutes, or until crust is golden brown.
In a mixing bowl combine, tomato paste, chopped sundried tomato. Gently add leftover olive oil until sauce is desired consistency.
Remove from oven spread pizza sauce over a thin layer. Less sauce & toppings makes a crunchier crust.
Add cheese, pepperoni, Peppers, Mushrooms, Onions.
Bake addioitnal 10 minutes or until cheese is melted.
Top with fresh Basil & serve.
