2 large chicken breasts (boneless, skinless)
2 tablespoons olive oil or butter
Salt and pepper, to taste
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup cream cheese
1 teaspoon Italian seasoning
1/4 teaspoon ground nutmeg (optional)
1 cup fresh spinach (optional)
1/2 cup sun-dried tomatoes, chopped (optional)
Fresh parsley, chopped (for garnish)
Zucchini noodles or steamed broccoli, for serving
Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil or butter over medium-high heat.
Add the chicken breasts to the skillet and cook for about 6-7 minutes per side, or until golden brown and fully cooked. The internal temperature should reach 165°F (75°C).
Remove the chicken from the skillet and set aside to rest. Slice the chicken once it has cooled slightly.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Reduce the heat to medium and pour in the heavy cream. Stir well to combine.
Add the grated Parmesan cheese and cream cheese to the skillet, stirring constantly until the cheeses are fully melted and the sauce is smooth and creamy.
Stir in the Italian seasoning and ground nutmeg (if using).
If desired, add the fresh spinach and sun-dried tomatoes. Cook for a few minutes until the spinach wilts and the tomatoes are heated through.
Add the sliced chicken back into the skillet, coating it with the Alfredo sauce.
Serve the Keto Chicken Alfredo over zucchini noodles, steamed broccoli, or any other low-carb vegetable of your choice.
