Keto Curry Turkey Salad

Now that Thanksgiving is over what can we do with all of that leftover turkey? Since you have likely gotten plenty of carbs, we thought something light and fresh might hit the spot. How about a great low carb curry turkey salad? Switching from savory to spicy might just be the way to wake up your leftovers, while giving last nights dinner more time to digest.
3 cups Leftover Turkey Meat
1 Stalk Green Onion (about 1/2 cup)
3 Stalks Celery
2 tbsp Fresh dill (chopped)
1/4 cup Mayonnaise (Avocado or Olive Oil)
1 tsp Curry Powder
1 tbsp Apple Cider Vinegar (ACV)
4 drops Liquid Stevia
1/2 Lemon (Juiced)
Combine mayonnaise, mustard, apple cider vinegar (ACV), lemon juice and curry into medium size mixing bowl.
Chop celery, Green onion, Fresh dill, and add to medium mixing bowl.
Prepare bite size pieces of Turkey, white or dark meat
Mix all ingredients together using a spatula to incorporate. Refrigerate for 45 minutes.
Serve plain or on a bed of lettuce.
