This quick and easy deconstructed egg roll serves up the familiar flavors of a traditional egg roll without the wrapper. It's a savory mix of ground pork and vegetables, seasoned with garlic and ginger, and is perfect for a low-carb meal. This one-pan dish is not only simple to prepare but also customizable with your favorite add-ins.
1 tablespoon neutral cooking oil (e.g., avocado or vegetable oil)
4 cloves of garlic, minced
3 tablespoons fresh ginger, minced (or 1 teaspoon ground ginger)
1 pound ground pork (alternatively, use ground chicken or beef)
1 teaspoon sea salt
1/4 teaspoon black pepper
6 cups shredded cabbage and carrot mix (coleslaw mix)
1/4 cup soy sauce alternative (e.g., coconut aminos or low-sodium soy sauce)
2 teaspoons sesame oil (added at the end)
1/4 cup chopped green onions
Optional: Sesame seeds for garnish
Heat oil in a large skillet over medium-high heat. Add garlic and ginger, sauté until fragrant, about 1 minute.
Add ground meat. Season with salt and pepper, and cook until browned, breaking up the meat as it cooks, about 7-10 minutes.
Reduce heat to medium. Add coleslaw mix and soy sauce alternative, stirring to coat. Cook until cabbage is tender, about 5 minutes.
Remove from heat. Stir in sesame oil and green onions. Serve hot, garnished with sesame seeds if using.
