Substitutions for Vegan and Dairy Free
1/4 Cup Fresh Lemon Juice
4 Whole Eggs
3/4 Cup Natural Sugar Free Sweetener e.g Lakanto or Swerve powder
4 oz Cream Cheese or Vegan Alternative
3 Cups Almond or Hazelnut Flour
2 Tbsp Baking Powder
1 Tbsp Lemon Zest
2 Tsp Vanilla
3 Tbsp Poppy Seeds
3/4 Cup Butter or Vegan Alternative
1/2 Tsp Sea Salt
3/4 Cup Natural Sugar Free Sweetener e.g Lakanto or Swerve powder
1/4 Cup Fresh Lemon Juice
1/4 Tsp Vanilla
Preheat Overn to 350
Grease nonstick round cake baking pan 9" or 10"
In large bowl use hand mixer to beat together butter and sweetener until fluffy
Beat in eggs, cream cheese, lemon juice, and vanilla
In a separate bowl stir together flour, baking powder, poppy seeds and sea salt
Mix wet ingredients into dry about one cup at a time.
Add batter to pan and smooth out until level
Bake approx 40 minutes uncovered until golden brown
Cover loosely using foil and bake another 20 minutes
Wisk together glaze ingredients
When cake has cooled drizzle glaze
Allow glaze to set and serve
