1 lb ground beef (preferably lean)
1 medium onion, diced
2 cloves garlic, minced
1 bell pepper (any color), diced
1 can (10 oz) diced tomatoes with green chilies, drained
1/2 cup shredded cheese (cheddar or Mexican blend)
1 avocado, sliced
2 tablespoons sour cream
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon paprika
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Preheat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain any excess grease.
Add the onion and garlic to the skillet with the beef. Cook until the onions become translucent, about 3 minutes.
Stir in the bell pepper and cook for another 3 minutes, until slightly softened.
Add the drained tomatoes, cumin, chili powder, paprika, salt, and pepper to the skillet. Mix well to combine all the ingredients.
