This recipe for wild caught salmon with a verdant green organic pesto is inspired by the Mediterranean diet. Filled with seafood, nuts & olive oil, the Mediterranean diet holds the top spot for the heart-healthiest eating style, according to WHO & Mayo Clinic. Wild caught salmon is higher in anti-inflammatory omega-3 fatty acids than farmed salmon, which also contains pro-inflammatory omega-6 fatty acids.
4 (4 ounce) Fillets Salmon
1 Cup Organic Raw Almonds
1 1/2 Cups Fresh Organic Basil Leaves
3 Cloves of Garlic
1 Cup Extra Virgin Olive Oil
1/2 Large Lemon (Juice)
Salt & Pepper
Preheat the oven to 450 degrees F.
In food processor add lemon juice, basil, almonds, garlic, and olive oil. Mix until creamy.
Line baking pan with foil and brush with olive oil.
Spread pesto sauce evenly on each fillet, salt and pepper salmon as desired.
Bake until salmon is cooked through, about 12 to 15 minutes
