4 Boneless, skinless chicken breasts
2 tbsp Olive oil
1/2 cup Sun-dried tomatoes, chopped
2 cloves Garlic, minced
1 cup Heavy cream
1/2 cup Chicken broth
1/2 cup Grated Parmesan cheese
1 cup Spinach, fresh
1 tsp Italian seasoning no sugar (optional)
1/4 tsp Red pepper flakes (optional)
Salt and pepper to taste
Season chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium heat, cook chicken until golden and cooked through. Remove and set aside.
In the same skillet, sauté sun-dried tomatoes and garlic.
Add heavy cream, chicken broth, and Parmesan cheese. Simmer until slightly thickened.
Add spinach, Italian seasoning, and red pepper flakes. Cook until spinach wilts.
Return chicken to skillet, spoon sauce over it. Simmer to meld flavors.
Adjust seasoning and serve hot.
