8 oz of unsweetened dark chocolate (preferably 85% cocoa or higher)

1/4 cup of monk fruit sweetener (or another keto-friendly sweetener)

1 tsp of peppermint extract
Directions
Prepare the Baking Sheet: Line a baking sheet with parchment paper.
Melt Chocolate and Coconut Oil: In a microwave-safe bowl or using a double boiler, gently melt the dark chocolate and coconut oil together. Stir until smooth and well combined.
Add Sweetener and Peppermint: Once the chocolate and coconut oil are melted, stir in the monk fruit sweetener and peppermint extract. Mix well to ensure the peppermint flavor is evenly distributed.
Pour and Spread: Pour the chocolate mixture onto the prepared baking sheet. Use a spatula to spread it into an even layer, about 1/4 inch thick.
Chill to Set: Place the baking sheet in the refrigerator for at least 1 hour, or until the bark is fully set.
Break into Pieces: Once set, break the bark into pieces. The size and shape of the pieces can be as desired.
Serve or Store: Serve immediately or store in an airtight container in the refrigerator.
