This vibrant taco salad is loaded with seasoned beef, crisp lettuce, tomatoes, black beans, corn, avocado, and tortilla strips, all tied together with a zesty, creamy cilantro lime dressing. Bold, fresh, and satisfying—perfect for any meal!
1 lb ground beef (or ground turkey)
1 packet taco seasoning
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
½ cup black beans, rinsed and drained
½ cup corn kernels
½ cup shredded cheddar cheese
¼ cup red onion, diced
1 avocado, diced
½ cup tortilla strips
½ cup sour cream
¼ cup mayonnaise
¼ cup fresh lime juice
½ cup fresh cilantro, chopped
1 clove garlic, minced
½ teaspoon cumin
Salt and pepper to taste
In a skillet over medium heat, cook the ground beef until browned.
Drain excess grease and stir in the taco seasoning with a splash of water.
Simmer for 2-3 minutes, then remove from heat.
Blend all dressing ingredients in a food processor or blender until smooth.
Adjust seasoning to taste and refrigerate until ready to use.
In a large bowl, combine lettuce, tomatoes, black beans, corn, red onion, and avocado.
Add the seasoned taco meat and top with shredded cheese and tortilla strips.
