1 lb ground beef (or ground turkey)

1 packet taco seasoning

1 head romaine lettuce, chopped

1 cup cherry tomatoes, halved

½ cup black beans, rinsed and drained

½ cup corn kernels

½ cup shredded cheddar cheese

¼ cup red onion, diced

1 avocado, diced

½ cup tortilla strips
For the Creamy Cilantro Lime Dressing:

½ cup sour cream

¼ cup mayonnaise

¼ cup fresh lime juice
-
½ cup fresh cilantro, chopped

1 clove garlic, minced

½ teaspoon cumin

Salt and pepper to taste
Directions
Prepare the Meat:
In a skillet over medium heat, cook the ground beef until browned.
Drain excess grease and stir in the taco seasoning with a splash of water.
Simmer for 2-3 minutes, then remove from heat.
Make the Dressing:
Blend all dressing ingredients in a food processor or blender until smooth.
Adjust seasoning to taste and refrigerate until ready to use.
Assemble the Salad:
In a large bowl, combine lettuce, tomatoes, black beans, corn, red onion, and avocado.
Add the seasoned taco meat and top with shredded cheese and tortilla strips.
Dress and Serve:
Drizzle the creamy cilantro lime dressing over the salad.
Toss gently and serve immediately.
